Leek and Potato Soup
Wow, I may actually be on top of things with French Fridays with Dorie this month! It’s such a treat to cook in our new kitchen! I just have to remember where I’ve put things…LOL!
I love this soup. It’s really easy to make on a work night. I did add Spinach for a little color and extra flavor. Instead of Croutons, I made Crostini from Sourdough Bread which I brushed with Olive Oil, broiled on low until lightly toasted. Then I turned them over and brushed them with Olive Oil, again, sprinkled them with Seasoned Salt, and topped them with Parmesan Cheese. I put them back under the broiler until the cheese was melted and starting to bubble and brown.

I had to omit the croutons, because we’d get too full, and there was a lasagna afterwards, but your crostini look so good, that next time I’ll have to make them.
