Another fantastic recipe from Giada De Laurentiis – the flavor combination is wonderful! The Pork Chops are filled with Spinach and Sun-dried Tomatoes sauteed in Olive Oil and scented with Garlic and Thyme then blended with Cream Cheese and Chevre. The sauce is a blend of Lemon Peel, Lemon Juice, Dijon Mustard, and Chicken Broth.
The only change we made to her recipe was to add 1/2 Tablespoon of Arrowroot to the sauce to thicken it a bit. We thought this would also be a great way to prepare fish. Easy enough to prepare on a work night, but elegant enough for company – and just the right blend of flavors!
We bought this fresh Spring Mix Orzo at Pike Place Market in Seattle, and it was perfect for this dish! However, it absorbed the Chicken Broth very quickly and I had to add 2 extra 1/4 cups of water to allow it to cook thoroughly.
This is a quick, and easy way to prepare Orzo that works great as a side dish with subtle flavors. You could also stir in vegetables to make it more robust.
