Cowboy Cookies~Baked Sunday Mornings~

Cowboy Cookies!  Yee Haw!


Ready for the oven

Yes, I’ve joined another on-line cooking club!  This one is called Baked Sunday Mornings and we’re baking our way through Baked Explorations: Classic American Desserts Reinvented by Matt Lewis and Renato Poliafito.  It’s a marvelous book and this group of bakers is top-notch.


This week’s challenge is for Cowboy Cookies which are soft, chewy oatmeal cookies studded with dark chocolate and pretzel bits.  


The recipe also calls for Espresso Powder dissolved in 1/4 cup hot water, but since I’m not a coffee-drinker, I was afraid it would be too strong for me, so I used Kahlua instead.


The one word I have for these cookies is, “Addictive”!  I could not stop eating them!  I love cookies with a lot of texture and layers of flavor – and these fit the bill!  I did have to resist the urge to add nuts to them, but I don’t think they really needed them with the crunchiness of the pretzels.


I love this cookbook & I love this recipe!

    Yes, I do consider you to be my friend. And, your cookies look fabulous. I love the pretzel pieces on top…great idea. And I agree…they are addictive! Glad you have joined this group…always enjoy your blog.

    Welcome to Baked Sunday Mornings! I love that you snuck in some nuts! I completely forgot about adding the espresso. I read it in the recipe and decided I would omit it, but in doing so omitted the water too. This could explain some of the issues I had with this one!
