At my recent high school reunion in NYC for the Overseas School of Rome, my friend, Flavia, told me about Julia Della Croce. Julia is a talented Italian chef whose website Flavia designed. I ordered Julia’s cookbook, Italian Home Cooking, and immediately tabbed several pages. Not only is in an interesting book about authentic Italian cuisine, it’s beautifully photographed.
The first recipe we tried is this wonderful linguine. It’s light white wine sauce creates a perfect spring dish. Julia insists that you use real Italian tuna in olive oil, and I think it makes all the difference.
Southern Italians have a definite opinion against mixing seafood and cheese – they say it makes the fish taste metallic. So, I will leave it to your discretion whether you choose to top your pasta with Parmesan, or not.
We served this pasta with salad and these great Cheese Twists from the Channel Islands Farmers’ Market.
