Beautiful Blackberry Pie ~ Baked Sunday Mornings ~

July 3, 2011 by susanelester

Beautiful Blackberry Pie!

This week’s Baked Sunday Mornings challenge was for this beautiful Blackberry Pie!  I was a little anxious about this challenge because I’ve never made a double-crust pie before (yes, really!).

Pie Crust Dough ready to chill
Matt and Renato say that their Classic Pie Dough is very forgiving to work with – and it is.  Not only does it have a velvety texture that is so different from other pie crusts that tend to be dry and lack flavor, it’s pliable and bakes up into a flaky, buttery crust that perfectly complements the Blackberries and Lemon flavor.  This crust is so good that it’s like eating cobbler!  And the raw sugar on top was a great finishing touch.

Filled Bottom Crust
The one thing I would do differently next time is add 1 – 2 teaspoons of Arrowroot to the filling.  The flavor was perfect, but it was just too juicy – which I attribute to the freshness of the berries.

Fresh from the oven!
My brother called this pie, “Ridiculously delicious!”

Such a beautiful pie…you look like an old pro. Congrats on your 1st double crust pie. I loved everything about this pie except for the too watery filling…well there is no water, but it seemed like it. Hubby’s favorite dessert is fruit pie, about any variety, so we make pie every week. Now you will want to make pie more often too.

While Seattle Pastry Girl is offline (hoping everything is okay with her), there’s a temporary facebook group to post our entries at http://on.fb.me/nKeKQd. Could you help spread the word?
