My sister-in-law wanted a special edition 75th Anniversary Fiestaware cake plate for her birthday, so I decided to give it to her with a cake on it! She loved the Chocolate Coffee Cake that I made for John’s birthday, so I made Sarabeth’s Margaret’s Espresso Cake for her (scroll down a bit to see the recipe) .
It’s infused with Coffee and Instant Espresso. Of course, you do not have to use instant coffee if you do not want to. At home, I like to use a stovetop espresso maker or a moka pot to create freshly brewed espresso. Plus, I have just purchased a new moka pot after reading a useful guide on https://www.thefullmooncafe.com. So if you are tempted to give this recipe a try, you can switch out the instant coffee for a fresh espresso. I’m not a huge coffee drinker, but I thought the cake smelled great as it baked in the oven – like caramel. I used this Rose Bundt Pan.
After it cooled, I drizzled it with Coffee Glaze and Chocolate Ganache, then sprinkled it with Elegant Cocoa Pearls from Trader Joe’s. My family loved it.
