I love coconut! I always have, so I was looking forward to trying Dorie’s Coconut Tea Cake from Baking From My Home to Yours. Infused with coconut milk, vanilla, and rum, it’s moist and delightful! I had a piece warm from the oven with a cold glass of milk. If you love coconut as much as I do, you’re sure to like this simple cake.
It comes together quickly and can be placed in the oven at the beginning of a dinner party so you can serve it warm to your guests. Although it would be an easy accompaniment to whipped cream, ice cream, sorbet, or fruit, it stands well on its own, It can be served as dessert, eaten for breakfast (can you tell I’m planning ahead?), with tea, or an after work/school snack.

Susan, I am a huge fan of coconut! I even drink coconut water as my drink of choice when I’m not having my tea. This cake looks absolutely gorgeous!

How is it that I own that book and am somehow always surprised when people post recipes from it? I love coconut and yet I don’t remember seeing this recipe at all. Maybe it’s that I need a visual before I can get excited about a recipe. In any case, this cake looks delicious and now I’m off to flag it in my book.
