Pan-fried Albacore Tuna with Chardonnay Reduction Sauce with Zucchini and Parsley Potatoes

Pan-fried Albacore Tuna


We bought this Albacore Tuna Fresh from the boat at the Channel Islands Farmers’ Market.  We wanted to prepare it in a way that let the flavor of the fish come through.  We sprinkled it with salt and pepper and pan-fried it in just a bit of Olive Oil for about 5 minutes per side – of course, you  can adjust the time to your preference.

Chardonnay Reduction Sauce

Pour one bottle of Chardonnay into a medium saucepan and add a bouquet of fresh Thyme and Rosemary bound in twine.  Simmer over low heat for an hour until sauce is reduced by 2/3 the original volume.  Remove herbs and pour warm sauce over fish to serve.
Zucchini with Green Onions and Parmesan Cheese
Slice 3-4 medium zucchini and place in a bowl.  Sprinkle with salt and let sit about 5 minutes.
In a large skillet over medium heat, sautee:
1/4 cup Olive Oil
Prepared Zucchini
1 bunch of green onions, chopped
Stir often to cook evenly, until tender.  Sprinkle with a scant teaspoon of sugar to cut the bitterness of the squash.  Top with grated parmesan cheese. 

Parsley Potatoes

Clean and half about 6 New Potatoes.
Boil in salted water for about 20 minutes, or until easily pierced with a fork.
Toss with:
 4 Tablespoons of Butter
Salt and Pepper, to taste
2 Tablespoons freshly minced Parsley

    Sigh. The tuna looks great – I still have over 40 pounds of big eye tuna from The Dude’s fishing trip that I haven’t worked through yet. This reminds me that I need to get cracking…
