Tomato Mac & Cheese from Cook’s Country
This is a wonderful, flavorful variation on a classic. We halved this recipe and served it as a side dish with steak. The texture and flavor combination was just right – and would work well with chicken, fish, or pork, too. The trick is to partially cook the pasta, strain it, then finish cooking it in the tomatoes to absorb the flavor. We’re sure to enjoy this again & again.

Love this mac & cheese recipe with tomatoes, I’ll bet it was really good with steak. I made plain mac & cheese this past week for my grand kids but I can’t wait to try this version, looks so good;-)

Damn Cooks Country. I gain five pounds ever time I see one of their recipes which are always so good. This looks beautiful. I’m on something of a diet now but when I’m off of it I want a big mac and cheese like this one as my reward.
