This week’s challenge from Baking With Julia by Dorie Greenspan is for this simple Pizza Rustica. I’ve never had anything like this before but my friend, Doretta, whose family immigrated from Naples, makes something very similar to this every year for Easter. She assured me it was traditional and very well-done.
I made this in a 9-inch cake pan with a removable bottom because I thought it looked more rustic and mote Italian this way.

I served the Pizza Rustica to my Book Club friends with Asparagus Soup and a make-your-own salad bar. It has great texture, and a very mild flavor. I like the contrast of the saltiness of the prosciutto with the sweetness of the crust. This is the first time I’ve made a lattice crust, so was thankful it was for a rustic tart!

I found the recipe online. The version we made didn’t havae sausage in it, but I think it would have been better if it had.

Your pizza rustica is just gorgeous, Susan! I love the look of the straight sides from the spring form pan and your lattice work is so pretty. What a great dish to serve to your book club. Sounds like just the perfect dinner with the asparagus soup and a salad bar. I sure wish we lived near each other!
