This week’s Baked Sunday Mornings challenge is for this colorful, cool, and summery Strawberry Jell-o Salad. Because I made this to take to my mom’s house for a Memorial Day barbecue, I couldn’t resist throwing in some blueberries for a red, white, and blue dessert!

The Baked Boys say that although Jell-o Salad recipes span the U.S., you’re either a lover or a hater. Well, I’m neither. Jell-o Salads are not something I grew up eating, so I’m just not that familiar with them. Sure, we had Jell-o with Cool Whip for a refreshing dessert, but not salads. So, I was skeptical about trying this recipe. In the end, my curiosity won out and I was brave enough to serve it to my family.

Guess what? We all really liked it. It was the perfect dessert to follow the smorgasbord my mother and step-father prepared. The flavors and textures complimented each other and the flavor of the fresh berries shone through! I can’t say I’m a total convert on the Jell-o Salad issue, but I can say I really enjoyed this one.

I usually skip recipes that use jell-o, but the Baked cookbook is so good that I´m not surprised it was worth trying.
It looks really good, especially for summer and the pretzel crust I need to try that one soon, it´s intriguing!

Sooo brave to bring it to a family gathering! I’m with you on using different fruit – I probably would have liked it better with cherry Jell-O.

Such pretty fruits…beautiful for Summer. I did grow up eating lots of Jello…you would be amazed what my mother could put into Jello….almost like Christmas Vacation, well not that bad, but almost. So….I made sure my kids did not grow up with Jello, but I broke down for this recipe and it was fun and enjoyable. Even though we liked it I’ll probably not do Jello again for long time.
