Baked Sunday Mornings ~ Quick Skillet Snack Cake ~ aka the Perfect Little Chocolate Cake

Simple, yet elegant!

This week’s Baked Sunday Mornings challenge is for Quick Skillet Snack Cake.  And, I have to say, the name doesn’t begin to describe this perfect little chocolate cake.  It is quick, but so elegant.  The chocolate cake is light in texture, but packed with flavor with just a kiss of espresso.  It takes just minutes to whip the ingredients together before pouring the batter into a parchment-lined cast iron skillet and placing it in the oven to bake.

Perfect Chocolate Frosting

While the cake is cooling, a quick chocolate frosting is blended from just 4 ingredients – and it tastes just like fudge.  It’s perfectly chocolaty and buttery, but not overly sweet.  I think it would be great on brownies, too.   It was made even better by this 68% Cacao Dark Chocolate Bar from Moonstruck Chocolate Cafe in Portland which was exactly the right 3-ounce size required by the recipe.
