I’ve been cooking and baking with the very talented French Fridays with Dorie group since October 2010. We’re working our way through Around My French Table by Dorie Greenspan. This week’s challenge is for Crunchy Ginger-Pickled Cucumbers. Since I don’t care for cucumbers or ginger, I decided to make up one of the recipes I’ve missed. Summer corn is at peak freshness, so I choose to make Dorie’s Corn Soup.

It’s easy to make and absolutely delicious. Since our market had corn 7 for $1, I doubled the recipe. Once I had the soup going, I read back through the recipe and realized that I’d left out 4 cups of water. Honestly, the soup didn’t need it. The 6 cups of milk provided plenty of liquid, so I didn’t add the water.
Dorie suggests that since the soup is so sweet it serves as a good base for savory toppings, so we topped it with shredded cheese, green onions, and bacon bits. Absolutely delicious!

First, Susan, if I’d have known you were kmaking corn soup, I would have sent you some of my “leftover corn facts and figures”. I know way more about corn than I put in my Post a week ago! Just saying……. Your corn soup looks delicious and I will make that some time this month but the real gem in your Post this week is the tube pan-hint. You go, Girl. Never had heard that before. We liked the cukes.

Actually, I bet it tasted better without the water. I seem to recall thinking that this one could use a bit more flavor. But yours looks delicious! And frankly I don’t think that you missed anything with the cucumbers.

Susan, we loved this soup and I’d forgotten about it. A good recipe to pull out since fresh corn is in the market now. If you don’t like cucumbers or ginger you wouldn’t like the pickles! We loved them though:) Hope you are having a nice weekend.

That looks fabulous with the cheese, green onions, and bacon bits! And very clever idea to us that baking pan to cut the corn off the cob – I will have to steal that idea. 🙂
