Grilled Rib-eye Steak and Mostaccioli with Zucchini and Smoked Mozzarella

July 25, 2012 by susanelester 8 Comments

Grilled Rib Eye Steaks

What’s the parallel phrase for “trompe-l’œil” when it comes to food?  Using Prime Rib seasoning on these tender, juicy steaks was a convincing ploy!  They were just delicious and tasted like Prime Rib!  We shared one and will be making a Steak Cobb Salad with the other one tomorrow (post to follow).

Sprinkle Rib-eye Steaks with English Prime Rib Rub Seasoning on both sides.
Let sit for 10 minutes.

Grill over medium-high flame for 5 minutes on each side, then move off flame and continue to grill for up to 15 minutes – depending on desired level of doneness.

Mostaccioli with Zucchini and Smoked Mozzarella

Prepare 1 pound Mostaccioli according to package directions.

Cut 3 large Zucchini into thin slices – I used 3 different colors.

Sprinkle with Salt and let sit in a colander for 10 minutes to release excess moisture.

In a large, deep skillet, over medium heat, saute:

4 Tablespoons Olive Oil
2 cloves Garlic, mashed
2 Spring Onions, thinly sliced

When Onions are softened, stir in Zucchini.
Cook, stirring often, for about 8 minutes.
Add strained pasta to Zucchini.
Then stir in:
8 leaves Basil, chiffonade.
8 ounces Smoked Mozzarella, cubed
1/4 cup Parmesan, grated
Add Salt & Pepper to taste – keep in mind the cheese is already salty.

My gosh, your photos always make me hungry! Is that the seasoning that comes in a box? I think I have some floating around here…great idea to use on steaks. And that sunset is just amazing!

Forget the Rib Eye (although that was Michael’s favorite cut) and just hand over a plate of Mostaccioli with Zucchini and Smoked Mozzarella. That could be a meal in and of itself with a green salad and rustic bread. The smoked mozzarella is what intriques me. A lovely meal. A lovely sunset. A lovely Post.

I love a good steak together with short pasta, especially the way the juices from the steak sneak into the pasta sauce! Both look so good! My mom used to make salad the next day with leftover steaks.
