1/4 cup Blackberry Balsamic Vinegar
1/2 cup Lime Olive Oil
1 teaspoon Country Dijon Mustard
2 Tablespoons Honey
1 Shallot, minced
8 -10 leaves fresh Mint, chiffonade
Salt and Pepper to taste
