We made Caprese skewers for my birthday party and had about a dozen left over, so I took them apart, diced the tomatoes and Mozzarella and cut up the Basil. Then I tossed them all into a hot batch of Tri-color Fusilli with Olive Oil, Salt, and Pepper. Super-simple, and a great way to re-purpose party leftovers! Caprese Skewers
This is a fresh, elegant, and colorful appetizer that is so easy to make.
Drain one tub Ciliegine (tiny Mozzarella balls – literally “small cherries” in Italian)
Clean several bunches of Fresh Basil.
Line the serving tray with the largest ones, and reserve the medium-sized ones.
Rinse a pint of Cherry Tomatoes.
Using short decorative skewers (I purchased these bamboo ones at Cost Plus World Market), pierce the top of the Basil leaf at the pointed end.
Then pierce a Mozzarella ball, wrap the Basil around it, and pierce it again at the stem end.
Then pierce a Cherry Tomato and push it up to the Basil.
Place skewers on the prepared tray as you finish them, then drizzle with Olive Oil and sprinkle with fresh ground Pepper and Salt.

Your pasta dish is creative and delicious. However, I am more intrigued by the appetizer. I’m always on the lookout for a nice appetizer, and this one sounds great!!! Usually at a family gathering I get asked to bring appetizers and salad. That’s my designated role. Once again, Happy Birthday!
