They’re a tribute to the Girl Scout cookies, Samoas, that start with a shortbread crust topped with soft caramel infused with toasted coconut, topped with more coconut, and drizzled with semi-sweet chocolate. Trust me, they’re addictive!
If you love coconut and you’re looking for something that is sure to wow your family for the holidays, this is it! All it take is a little patience. Be sure to make these when you have time to wait for the cooling and refrigeration time.

I know I’m going to be insanely jealous of how everyone kept their caramel ‘soft’. Mine was very tough and chewy. Yours look beautiful! Love them! Great job – and yes, definitely a good Christmas cookie idea!
