4 teaspoons Cilantro, finely minced
Zest of 1 Lime
1 cup white rice
2 Cups water
In a medium sauce pan, over medium heat add rice, water, and seasoning to a boil.
Lower the temperature, and allow rice to simmer for 20 minutes.
Remove from heat, and let sit for 5 minutes before fluffing and serving.
To serve, spoon salsa along one edge of the plate, and rice on the other. Lay halibut in the middle of the plate and pour tomato vinaigrette over it. Garnish with cilantro sprig.
