This week’s Baked Sunday Mornings challenge is for Pumpkin Almond Cake with Almond Butter Frosting from the new Baked Elements cookbook. This single layer cake is the perfect addition to a Thanksgiving dessert buffet. Almond flour lightens up the density of the flavor and texture of the pumpkin and the almond butter makes a smooth, not-too-sweet frosting. I decorated the top of this one with Cinnamon Almonds from Trader Joe’s.
This cake comes together quickly and easily and my whole family enjoyed it.
