Weeknight Chicken Cordon Bleu with Basmati Rice Medley and Steamed Green Beans

Weeknight Chicken Cordon Bleu

Pre-heat oven to 350 degrees.

Ready for the oven

Spray an 8-inch square baking pan with non-stick cooking spray
Salt and Pepper 4 Thin-Sliced Boneless Skinless Breast Fillets
Place two fillets in the pan.
Top each with 2 pieces thinly sliced Black Forest Ham and 1 slice Monterey Jack Cheese.
Then press another piece of chicken on top and press it all around the edges to seal, making sure the ham and cheese aren’t peeking out.
Sprinkle and gently pat Italian Style Bread Crumbs into the chicken.
Bake for 45 minutes.

Basmati Rice Medley
We got this great rice mix at Trader Joe’s and prepared it with Chicken Broth.  It was like really good Rice-a-Roni!
Steamed Green Beans
Rinse and cut 1/2 pound fresh Green Beans.
Fill medium saucepan about 1 inch of water.
Add green beans and sprinkle with salt and pepper.
Cover and boil for about 10 minutes until they turn bright green & are easily pierced with a fork.

Enjoy!

    I like your weeknight version of this meal. Yum.

    Glad to hear your cat is recovering. My girls had to have a leg amputated on their German Shepherd. Geitha was such a trooper through it all and once she recovered, she didn’t let it stop her from doing anything 🙂 Hang in there!

    Susan this looks fantastic! I am all about fairly simple weeknight meals and this fits in with my schedule just perfectly. I am adding it to the monthly cooking menu!
