This week’s Baked Sunday Mornings challenge is for Bananas Foster Fritters. I really had no idea what to expect of these, so was happy when I saw a preview from Dafna on Stellina Sweets FaceBook page. They’re light, fluffy pastries that are not too sweet and slightly crisp on the outside.
These fritters are so quick and easy to make that they’d be perfect for a dinner party. You can make the *amazing* Rum Dipping Sauce ahead of time and re-heat it just before serving. And, if you have the fritters batter made up, you can fry them quickly while the table is cleared and and coffee is made. They are wonderful served warm and would make a great presentation made smaller and placed in a sherbet dish drizzled with sauce.
I have to say that as good as these fritters are, the Rum Dipping Sauce steals the show! It would be wonderful on Banana Pancakes, or brushed on a pound cake – I will definitely make it again!
