This week’s Baked Sunday Mornings challenge is for Bananas Foster Fritters. I really had no idea what to expect of these, so was happy when I saw a preview from Dafna on Stellina Sweets FaceBook page. They’re light, fluffy pastries that are not too sweet and slightly crisp on the outside.

These fritters are so quick and easy to make that they’d be perfect for a dinner party. You can make the *amazing* Rum Dipping Sauce ahead of time and re-heat it just before serving. And, if you have the fritters batter made up, you can fry them quickly while the table is cleared and and coffee is made. They are wonderful served warm and would make a great presentation made smaller and placed in a sherbet dish drizzled with sauce.
I have to say that as good as these fritters are, the Rum Dipping Sauce steals the show! It would be wonderful on Banana Pancakes, or brushed on a pound cake – I will definitely make it again!

I really liked these way more than I thought I would. I just ate a leftover dunked in my coffee, and yup–still good!

You are right about the rum sauce! I could drink it! Great looking fritters. And they would be great to serve for a dinner party. I think that would be a great treat. I still have batter in the fridge….might have to turn that fryer on again!

Mmmm… these sound interesting. I love bananas foster, and they look a bit like beignets, but the recipe is totally different! Amazing, I should try them.

Your fritters look great, Susan! Thanks for the shout-out! 🙂 I’m glad you liked these so much– I too thought they were awesome. I didn’t like the sauce quite as much as most people (a little too boozy for me), but overall, such a great treat. I think serving them for a dinner party would be terrific, but mine took forever to fry because of having to adjust the oil temp each time. Any tricks you can recommend to make the frying process faster?

An interesting take on fritters, Susan. The sauce sounds yummy to me……remembering that you are a couple that puts most of your brooze in your cooking. I loved when you wrote that in a Post once. When Stephen, my son-in-law of 26 years, was visiting us as a “boyfriend”, Michael and I were trying to impress him as much as he was trying to impress us. Michael decided to end the meal one evening with a fried banana dessert. He was so excited and, as usual, tooted his horn before producing the product. Well, Michael managed to destroy about 6 good bananas. They were awful. Melissa was mortified. Stephen, ever the diplomat, just mentioned very quietly that, “Perhaps there are some fruits that shouldn’t be cooked,” but he ate every bit of his friend banana. I loved being reminded of that story and think that Stephen would love, love, love this fritters.
