Ready to bake! |
This week’s Baked Sunday Mornings challenge is for Lemon Pistachio Cornmeal Muffins. I had no idea what to expect. They were described as sweet, lemony, and salty…hmm…
They were really interesting – in a good way. They were sweet and lemony, but not too salty. These muffins come together quickly and easily. But, the best thing about them is you can eat them any time of the day. We served them as bread with dinner, but will definitely have them for breakfast tomorrow morning as well. The colors are great and I think these would look lovely on an Easter buffet in a mini-muffin size. We tend to favor walnuts and pecans for baking, so it was fun to bake with pistachios for a change.
Since so many people asked about these tulip papers, I’m adding the link to King Arthur Flour here. They come in a few other colors, too – red for Valentine’s Day!

This sound amazing, all ingredients I love to bake with! I must try them Susan!
Susan, I love the way that combination of flavors sounds. Lemon and pistachio sounds so yummy together, I would have never thought of that. I can see how they would be great any time of the day.
Beautiful muffins! The lemon pistachio combo sounds fantastic!
Tell us about your muffin “papers”, please !
I have some lemon pistachios in the pantry right now, they’d be just perfect in these muffins!
You would only have had to produce your last picture to sell me on this cornbread. Love the flecks of green. Everything in it is a flavor I like. I also love your -ready-to-bake use of parchment paper (right?) . Lovely.
Oh yum – Never seen pistachio corn muffins before but they look lovely. I’ll bet the lemon was a nice addition, too 🙂
I loved these too. I’ll have to try the Honey Corn Muffins sometime. Yours look like they came out beautifully!
Your fresh from the oven muffins look fantastic! What a great pic! The parchment paper liners look so cool. They would be great at easter…..or just all the time. :o)
your muffins look BEAUTIFUL! great job!
I knew I’d find a fabulous muffin photo on your blog…I’m right. Beautifully presented and makes me want more.
The muffins look fantastic! Love the liners!
Your muffins are so pretty!
Love the look of your muffins. I did the same liners with mine and did a healthy version. Thought they were great!
Yes, great muffin cups! Did you make them? 🙂
Great job Susan, I love the KAF tulip papers! I use the red for Valentine’s and Xmas time. 🙂
Thanks for putting the link for the liners; they really make the muffins look so elegant. I also thought it was fun to bake with pistachios
These are gorgeous muffins Susan! And these contradicted flavors are very intriguing!
Great muffins, I love using cornmeal so this will make this recipe a winner
