Cheesy Focaccia with Caramelized Onions and Sautéed Spinach ~ Baked Sunday Mornings

Don’t you just want to take a bite?

This week’s Baked Sunday Mornings challenge is for Cheesy Focaccia with Caramelized Onions and Sautéed Spinach.  Caramelized onions, spinach, and cheese nestle in soft, luscious bread!  This is absolutely the best Focaccia we’ve ever had!  The bread is just perfect and the dough was great to work with – it’s so soft and smooth.

In Italy, this is how they serve pizza and Focaccia in Pizza Rusticas.  They cut a piece to order, weigh it, then heat it, wrap it in paper and hand it to you.  It’s a quick snack that you can eat as you walk, or enjoy sitting on a park bench.  This was an absolute favorite treat when my brother and I were kids growing up in Italy.  This is the first time I’ve had anything that compares to it in the States.  It’s amazing.

This recipe isn’t difficult, but requires you to work in shortly timed phases.  The dough is set to rise four times, the focaccia is partially baked, then removed from the oven to add the toppings before finishing in the oven.  Not to mention caramelizing the onions.  Oh, but it’s so worth it!

This would be perfect cut into bite-size pieces for a brunch or wine tasting.  We had it for lunch hot from the oven and snacked on it the rest of the afternoon.  We will absolutely enjoy this again!

    My god Susan, if you say it´s the best I have to try it! I simply think focaccia is one of those genius recipes, way better than pizza. I will let you know how it goes!

    Wow, your dough looks like it was much easier to work with than mine, which was quite soft (even though I added a lot of extra flour). Mmm, your focaccia looks delicious!

    Susan, TWD is doing focaccia this week! My dough is in the fridge and ready to go! I’m serving it for dinner tonight!!

    It really is good focaccia. I’m so glad we got to make this. We had ours for dinner and were snacking on it before that too. The dough was so great to work with too.

    My only regret is that this is all gone…I could definitely keep eating this delicious bread. Your pics are terrific and I loved reading that this recipe is close to authentic…that’s what I told my family who were all asking about origins…I told them, “Susan said….” so Thanks!

    You wouldn’t have had to write one thing about this week’s Baked Sunday Morning recipe. By just showing the pictures we all know how deliciously wonderful this foccacia is. I’ve already been to the site and printed off the recipe and will manage to get this made this month. If I need something to munch on, this is it. If I get it made, I’ll send you a pix.
