John & I were the lucky recipients of 2 dozen yummy Ginger Snaps from Stacey at Georgie and Hank. Stacey has been a Dorista all along but is starting her blog with her Valentine’s Day post!
These cookies traveled well and had a wonderful texture!
She made a recipe that was fun for her kids, too.

Here is the recipe:
1 tsp ground ginger
1/4 tsp ground cloves
1/2 tsp ground cinnamon
1/2 tsp ground cardamom
3.5 cups ap flour
1 tb bkg soda
1 tsp salt
1/2 tsp pepper
10 tb butter, unsalted, rm temp
1 cup sugar
1/2 cup packed lt brown sugar
2 lg eggs
1/2 cup molasses
1 cup candied citrus peel (optional)
Preheat the oven to 350 and line two baking sheets with parchment.
Toast the spices for 2-3 minutes.
Allow to cool.
Sift together all of the dry ingredients, including the spices.
Beat the butter and sugars together.
Add eggs one at a time, beating after each addition.
Beat in the molasses and then the flour mixture.
Place rounded tablespoons of dough onto baking sheet, spacing apart by two inches.
Bake 10-12 minutes.
Cool on baking rack.
