This week’s Baked Sunday Mornings challenge is for Chocolate Peanut Butter Fondue, but I chose to make up a recipe I’d missed because the group made it before I joined: Almond Joy Tart. My mother invited us to dinner tomorrow night so I wanted to make something special to share with my family. Everyone in my family loves coconut, so this looked like the perfect choice.
The original recipe calls for 6 4-inch tarts but I opted to make one large tart and one small one (we had to have a tester-taster!).

This tart is really simple to make – an almond crust filled with coconut immersed in white chocolate ganache and topped with chocolate glaze and chocolate-covered almonds. It takes time, but most of it is spent resting between steps. I had dark and milk chocolate covered almonds from Trader Joe’s, so I used them as a garnish.

I don´t think I ever had an almond joy bar, but I do make coconut chocolate desserts; it´s such a great combination. The idea of white chocolate is wonderful with the coconut, I love it! Have a great sunday Susan.

Mary – yes, they all loved it – we came home with an empty platter! It’s lovely because it’s not overly sweet with the almond tart crust. It looks so impressive but is really easy to make!

Oh my gosh, that was the best tart ever. I am so glad she made it for our family dinner. Everyone wished they didn’t have to share the leftovers, but we did.
