Southern Chicken meets SoCal Potato Salad |
This meal is a perfect blend of our different backgrounds. John’s mom grew up in Murray, Kentucky, and he remembers his uncle grilling this chicken for his family. And my mom’s potato salad was enjoyed at so many family events that every time I taste it, my mind is flooded with memories of family gatherings and summer.
Kentucky-style Barbecued Chicken
In a small heat-proof bowl, whisk together:
1/4 cup Vegetable Oil

1/4 cup White Wine Vinegar (we used Katz Late Harvest Sauvignon Blanc Vinegar)
1 Tablespoon Worcestershire Sauce
1 Tablespoon Louisiana Hot Sauce
1 Tablespoon Tomato Paste
1/4 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
2 large chicken breasts (we used boneless)
Turn burners on grill to high for about 5 minutes, then reduce to medium.
Sear chicken on each side, then baste top side of chicken twice, flip and baste top once.
Repeat these steps every 5 minutes for 20 minutes until chicken is cooked through.
Of course, the leftover chicken is great for sandwiches & salads, too.

In a medium saucepan, bring 6 medium Russet Potatoes to boil until you can pierce them easily with a fork.
Remove from heat, drain pan, and cool.
While the potatoes are boiling, place 4 eggs in a small saucepan and cover with water.
Bring them to a rolling boil, then turn the burner off. Let the eggs cool in the water.
In a large mixing bowl, place:
3 ribs of Celery, chopped
1/2 White Onion (or 3 Spring Onions), finely diced
1 – 1 1/2 cups Mayonnaise
2 Tablespoons Country Dijon Mustard
1 teaspoon Salt
1/2 teaspoon Pepper
1/2 teaspoon Celery Seeds
Add:
Diced Potatoes
Eggs sliced both ways in an egg slicer
Stir with a large rubber spatula until well-blended.
Taste; and adjust Salt and Pepper, as desired.
If you’re taking this to a party, top with sliced hard-boiled eggs and sprinkle with Paprika.
