This week’s French Fridays with Dorie challenge is for Financiers which are a type of petite French pastry. I opted for both of Dorie’s Bonne Idee suggestions and created these little gems: Chocolate Financiers studded with Blackberries.

Dorie received the recipe for Chocolate Financiers from French Chocolatier, Jean-Paul Hevin. She says you can make them in mini muffin tins if you don’t have Financier pans. My mom gave me these pretty paper baking cups so I decided to try them and they worked perfectly. To see what Financiers are supposed to look like, See my friend, Patty’s post at Patty’s Food.
We each ate one of these warm from the oven with a glass of Adeleida Ice Wine. They were so much more than we expected. For a dessert that comes together in minutes, rests in the refrigerator for an hour, then bakes for 13 – 18 minutes, they were heavenly! They were like chocolate souffles. We both went back for seconds. After they cooled, they were so melt-in-your mouth chocolaty – kind of like chocolate mousse with crushed almonds and blackberries.

I made the chocolate first and, just like you, thought they were unexpectedly amazing. Love the berry touch Susan! I will make these often, especially when I have whites left from sweet dough and ice cream.

Oh, Susan, your presentation and paper baking cups are just gorgeous. And, weren’t they good? I was lucky to find my mini-muffin tin in my moving boxes and it worked fine but not comparable to yours. I also am intriqued by how delicious the chocolate financiers look. The berry is a perfect finale. Very nice, Susan, very nice.

I really enjoyed the almond version, but yours are making me wish I’d made the chocolate ones. I love the little baking cups your Mom gave you – so pretty!
