This week’s French Fridays with Dorie challenge is for Back-of-the-Card Cheese and Olive Bread. It’s a quick bread mixed by hand that lends itself to creativity. We used this Roasted Tomato Tapenade that we received in our Pasolivo Press Club shipment and shredded Mozzarella. The bread had a really light texture and a rich flavor. You can see the melted cheese throughout the bread. This bread would make excellent grilled cheese sandwiches.

Congratulations on your 500th post! I’m not going to get to try this bread until later in the weekend, as I’m at a conference for a couple of days, but I’m looking forward to it. The roasted tomato tapenade sounds like a perfect choice for this.

500 posts! Awesome, Susan! I love the idea of the melty cheese. I used feta, which didn’t really melt. Maybe I should try a redo. Your loaf looks wonderful.

Yes, this would make great grilled cheese sandwiches. Have you tried that yet? Your loaf looks gorgeous – as to all your baked goods. I just loved this bread and it worked for me in the high altitude. Going to go with the sun dried tomatoes next. Congratulations to you on your 500th Post. I’ve known you for about half of them, I think. I just joined the Pasolivo Press Club. Since I’m going to start spending 4 to 5 months in Cambria every Winter, I want to be more familiar with the local products. I hope you and John doing something special to celebrate your 500th Post although you always seem to be doing special things with and for each other. I have never heard of Melk Abbey. Looks like a beautiful and stately place.

I have been snacking on this non-stop after toasting it. What a great idea to make mini grilled cheeses with it. I guess I now know what we are having for lunch today! I must get rid of this loaf before I eat the whole thing.

Happy Anniversary!!! WoW 500 posts! seems like a lifetime but a very pleasantly spent one!! I liked the bread better the next day when I put it in the grill with a big piece of cheese on it! It was lovely! Next time maybe sundried tomatoes and feta cheese!!!
