Sable (Sandy) Pastry |
This week’s French Fridays with Dorie challenge is for this lovely, summery Sable Breton Galette with Berries. The pastry has a loose crumb with the addictive flavor of the best buttery sugar cookie you can imagine. Top that with the sweet-tart flavor of Lemon Curd and fresh berries ~ I couldn’t resist adding fresh White Peaches!
Since this galette is best eaten fresh, I made two individual ones and saved the rest of the pastry to make them again (which we’re really looking forward to!).
This is a wonderful alternative to Strawberry Shortcake that would be perfect with all kinds of berries and stone fruits. We’ll be sure to enjoy this again, soon. I absolutely plan to make it for my mom. It’s light, elegant, and delicious!

Looks beautiful! I’m pretty excited about this one. Glad to hear that peaches worked. Berries aren’t in season in Naples, so I plan to go the peach/cherry route.

Looks scrumptious, Susan. I didn’t think of stone fruit. We’re only up to strawberries in season here on the east coast. I’ll try your version when the peaches are ready. And, the mini-versions are so cute.

We went with the full version and then just topped slices as we went. The only downside was that we couldn’t stop cutting ourselves more slices. It was gone within 2 days. It was even good plain!

Those peaches just top off a perfectly lovely individual dessert. It looks delicious, Susan. Just love the little pinwheel effect (which I will borrow when our Colorado peaches come in). The sablé is one of my favorite cookies. I’ve never met a cookie I didn’t love but shortbread goes to one of the top five.

oh lovely- I had not thought of peaches and the sound (and look) stunning ! I passed on this one but enjoyed far too many of the ones Nana prepared- they were insanely good. Can’t recall the last time I enjoyed something so much. Also- thought of you and your kitty last week and my little guy continued his affection for floral arrangements. I find that the kitchen table is far from safe and I have to put flowers up high. He sat meowing (which we have decided it more like “no….ing” and sounds EXACTLY the same….)at the base of the fireplace after I put them on the mantle. He finally jumped straight up and proceeded to taste my roses. God I love that cat. Of course I removed him but I had to take photos first–so my camera has Dorie food, dorie food, kitty eating flowers, Dorie food 🙂
