Occasionally, John and I come home from work exhausted with no great ideas for dinner and not enough energy to go out, so we look in the pantry, the fridge, and the freezer for inspiration. These evenings often yield delicious soups, salads, pasta, or risotto. Tonight, we created this Shrimp Risotto with Bacon and Peas which was comfort in a bowl at the end of a long day.
