I happened to have some beautiful tomatoes on the counter when I received the June edition of Southern Living Magazine, so I just had to make this lovely Tomato, Cheddar, and Bacon Pie! It’s easy to put together and filled with fresh herbs, cheese, and bacon – Yum! Even our niece, who isn’t very fond of tomatoes, loved it. We served this for lunch, but it would be great for brunch or dinner, too.

Because my Mr. Rosemary is not a fresh tomato lover, I tend to steer away from great dishes like this, knowing I’d eat the whole thing myself! But . . . so be it. This is tempting enough to make me do it!

I’m sure this Pie is delicious with just regular vine tomatoes but with heirloom tomatoes, it’s “awesome” (little Clara’s word to describe everything). Love the herb stem (parsley or dill) that’s adorning your creation. I suspect you made this over the wedding week-end. Loved seeing the pictures but am really looking forward to going through your European pictures. It’s one thing to take them while vacationing and quite another to edit and get them ready to show, isn’t it?

Oh Susan, this pie looks so delicious, and gorgeous to boot! I planted several different kinds of tomatoes this year…can’t wait till they come in. I see this pie in my future. I actually get SL and also marked it to try. Yum!
Susan, I see your goal here is “health food!” 🙂 This is serious “mental health food,” though – comfort food when Mom isn’t there! I can’t wait to try this now that fresh tomatoes are everywhere!
