Fresh, Sweet, Salty, and Delicious! |
We are lucky to be able to get Fresh Jumbo Scallops from Fresh Fish Fanatics right off the boat at the Channel Islands Farmers’ Market. These scallops are so sweet that it doesn’t take much to bring out their mild ocean flavor. But we decided to dress them up a bit with some Prosciutto and sweet & spicy Mojo Marmalade and place them over herbed rice. They were heavenly – the flavor of the ocean kissed with the flavors of summer with a hint of spice.
Herbed Jasmine Rice
Cook 1 cup Jasmine Rice according to package directions, stirring in 1 teaspoon Sunny Spain Seasoning and a pinch of Salt just before covering with lid.

Jumbo Scallops Wrapped in Prosciutto
Cut 4 slices of Prosciutto in half lengthwise.
Wrap one piece of Prosciutto around each of 4 Scallops.
Sprinkle one side with freshly ground Salt & Pepper.
Drizzle Garlic Olive Oil to just coat the bottom of a large saucepan.
Place it over medium-high heat.
When oil is warm, set Scallops in pan, seasoned side down.
Sprinkle top with freshly ground Salt & Pepper.
Turn Scallops over after 3 minutes and cook for another 3 minutes.
Remove from heat and place nestle 4 Scallops into a bed of rice.
Mojo Marmalade
In a small pitcher with a spout, whisk together:
1/2 cup Orange Marmalade
Zest and juice of 1 Lime
1/4 teaspoon each Red Pepper Flakes and Salt
Pour over Scallops, to taste.

Susan, you and John use spices and flavorings and seasoning so well. I am not a lover of scallops but this Post makes me know I should probably re-think that.

Sounds wonderful, Susan! Love the Mojo Marmalade! Have quite a few jars of homemade marmalade left from the winter – and now have a good use for it! (Other than scones, of course…) Love the use of prosciutto over bacon… Much more elegant! ~ David
