Fabulous Summer Meal |
This week’s French Fridays with Dorie challenge is for Dieter’s Tartine which is SO much better than it sounds. A tartine is an open-faced sandwich usually topped with a rich spread. It’s perfect for summer with a simple salad drizzled with olive oil and Balsamic Vinegar.

We started with toasted slices of Como Bread spread with Ricotta Cheese. Then added the first tomatoes from our summer garden and diced zucchini, then sprinkled them with salt, pepper, and fresh chives. And just before taking the first bite, drizzled Olive Oil over the top.
You can really think of endless variations for a simple, elegant brunch, lunch, or dinner.

Your version looks fantastic! We had ours with a salad, too, as I was using up the last of the wonderful lettuce my Mom had brought me from their garden. Most of my garden isn’t ready, yet, but when it is I’ll be having variations of this, for sure.

That looks incredibly fresh and very appealing. This is the ideal summer meal. Nothing like tomatoes fresh from the garden.

Now Susan, if I had a tartine that looked like this, I don’t think I would mind having all those ingredients on top of a piece of bread. Very nice!

Endless variations is right. Fresh tomatoes from chez toi. Envious. I don’t think I’m a fan of diced zucchini but it’s probably equivalent to the crunch of a cuke albeit not the same flavor. This tartine was nothing flashy, just a tasty quickie and something that’s easy to put together for lunch. Right? You are getting some nice shots on your Day Trips, Susan.

I did ok with the carb craving when I prepared this for my family, but I can assure you I would not have survived your rendition with the Como bread, RICOTTA (=genius) and drizzle of olive oil. My mouth is watering now 🙂 And how lovely that you could enjoy your own first tomatoes for this adventure- makes it all the more special. And love that bird shot- we don’t see any of those around here although we have the official “Audobon” PA 5 minutes away – Mill Grove Estate. JJ Audubon resided at this stone home when he arrived in the US and I love to visit it from time to time.

Love your take on this! Ricotta is something I would not have thought of but will keep it in mind. Is there anything better than produce right out of our own garden?
