|Chocolate, Peanut Butter, and Buttercream|
This week’s Baked Sunday Mornings challenge is for Oopsy Daisy Cake – a mocha cake with peanut butter filling that’s coated with cooked peanut butter buttercream frosting. Doesn’t it sound amazing? I really wanted it to be amazing. Even though my cakes looked perfect when I took them out of the oven, they quickly began to sink in the middle. They were cooked through and tasted great, but I lost quite a bit of cake when I leveled them off.
Then, there was the peanut butter filling which had the texture of truffle filling – sounds good, right? Well, it completely overwhelmed the flavors of the cake and the buttercream. It took me three tries, over a period of months, to perfect the Baked cooked buttercream, but it’s amazing. Now that I’ve got it down, I love it. This version was really good, and with just a hint of peanut butter, it really set off the cake.
John & I both thought we would have enjoyed this cake better without the peanut butter filling – surprising, I know! I decorated the cake with mini Reese’s Peanut Butter Cups and Pieces. I really wanted to love this cake, but it was one of the few Baked cakes that didn’t wow me.
