This week’s Baked Sunday Mornings challenge is for Lime Tarragon Cookies with White Chocolate Lime Topping which are incredibly addictive! These large shortbread cookies infused with Lime and Tarragon, are topped with a bit of melted White Chocolate sprinkled with Lime Zest. Luckily, this recipe only makes 12 cookies, because we couldn’t stop eating them! If you love buttery shortbread and citrus, you will love these cookies!

I love Tarragon with chicken and fish, but it never occurred to me to use it in sweets. Leave it to the Baked Boys to come up with this winning flavor combination! The Tarragon lends a slight licorice flavor to the cookies and really enhances the citrus flavor.
The only thing I would do differently is to roll them into balls and press them slightly before baking to give them nicer shapes. For another interesting flavor combination of herb-infused sweets, check out their Rosemary Apricot Squares.

If you’re visiting the Central Coast and love shortbread, it’s worth a trip to Cayucos to visit the Brown Butter Cookie Company. Just be sure to hold onto your cookies! We saw a Seagull swoop in and grab a bag right off the roof of a woman’s car that she set down to open her car door.

I think the twist with tarragon is an interesting idea for a cookie. These look delicious. As far as I am concerned, all cookies are addictive. I went through a package of Snickerdoodles this week and they weren’t even homemade. Thanks for the Cayucos tip. I have loaded it in my Cambria file.

Beautiful cookies! You must have made some big cookies to get only 12….I got 32! I made them small though…a good pop a whole one in your mouth size….lol! I agree with you on the different flavors that you could try with this recipe…the lemon-lavender one sounds lovely!

Nice job, Susan! I too love that BAKED throws in interesting twists like savory herbs– they always keep us on our toes! 🙂 I’m glad you liked these too– I thought they were wonderful. I agree about flattening them for a nicer shape– I accidentally flattened a few out of habit, and those baked up more evenly and looked prettier. Yay for interesting cookies!

I had never used tarragon in sweets either, glad to know it works, at least here! I loved these as well, it seems like only a few of us did. I scoop all my cookies with a #40 disher and got 18 with this recipe. Probably could have eaten twice that amount! 😉
