Strawberries from the Channel Islands Harbor Farmers’ Market |
Do you ever get an idea in your head about something you’d like to make and think you must have seen it a dozen times on recent blog posts or in a magazine only to end up completely frustrated because you can’t find the recipe anywhere? But, of course, you still have the idea in your head! And, if you’re as stubborn as I am, you will find a way to pull it off! That’s how this lovely summer tart came to be.
Inspiration Number One comes from my friend and mentor, Lizzy’s Strawberry Lemon Tart. It’s gorgeous, but the filling wasn’t exactly what I had in mind, so I turned to her inspiration, Sarabeth. Sarabeth’s Bakery: From My Hands to Yours is one of my favorite baking books and you’ve seen me feature it often. So, I made her Tart Pastry and half a recipe of her Lemon Curd. You can find both recipes on this post from The Heritage Cook where she features Sarabeth’s Lemon Meringue Tartlets.

I followed the recipe and method, eliminating the meringue and topping my tart with hulled strawberries instead. It was gorgeous and delicious – the perfect blend of summer flavors and one of my life-long favorites. Mission accomplished!

Sometimes the best thing to do is just what you did… I call those dishes the Mr. (Or Mrs.) Potato Head dishes. A part from here, a part from there… It all comes together perfectly in the end. Sarabeth’a lemon curd is almost identical to the recipe I use – it is one of my most favorite flavors on earth! And your creation of this tart is the perfect way to use it! ~ David
