|Crisp, colorful, and cool!|
Cut a small head of red and green Cabbage in half.
Peel the leaves off and cut the tough core out of the middle of them.
Then stack them flat and slice them thinly in both directions.
Toss into a large bowl.
One bunch of Green Onions, thinly sliced
1 cup shredded Carrots (I used pre-shredded ones from Trader Joe’s)
Stir vegetables together, then add:
1/4 cup Sugar
1/2 cup Mayonnaise
1/4 cup Milk
1/4 cup Buttermilk
2 Tablespoons Fresh Lemon Juice
Salt and Pepper, to taste
Stir until thoroughly coated, then chill for a couple of hours.
Stir again just before serving.

We used this recipe from Southern Living. I’d never made Corn Pudding before, but it was really easy and puffed up like a beautiful souffle.
