As soon as I saw David’s Spaghetti with Tomato-Saffron Cream Sauce, I knew John would love it! So, last Sunday, I bought some beautiful tomatoes at the Farmers’ Market and John made this incredibly delicious pasta. David’s sauce instantly transported us to Campo De’ Fiori in Rome where the chefs have a daily market right outside their doors and everything is as fresh as can be.

Here’s David’s recipe. I seem to always associate saffron with seafood so was glad to discover a different way to experience this exotic, earthy herb. We used Rotini instead of Spaghetti because we like the way it holds on to sauces. No matter what shape of pasta you use, you’ll be delighted with this sauce. John said it’s in his top three – the other two are Rotini alla Carbonara and Mostaccioli All’Amatriciana.
We enjoyed this pasta with a glass of 2005 Sangiovese from Orchid Hill Winery in Paso Robles. Sangiovese is known to pair particularly well with tomatoes, so was a good match for this dish.
