Caramel Custard poured over Toasted Almonds |
This week’s French Fridays with Dorie challenge is for this gorgeous, autumnal Caramel-Almond Custard Tart. It’s Sweet Tart Pastry is scattered with lightly toasted almonds then filled with a lovely caramel custard. I’m kind of obsessed with caramel so was really looking forward to making this.
Dorie’s Sweet Tart Pastry only has a few ingredients so it comes together quickly and turns out perfectly every time! It’s delicate, lightly sweet, and so buttery.

This tart would be perfect for Thanksgiving because it looks so elegant but is easy to prepare. All you need is a little patience. It has all the flavor you expect from a special dessert but it’s far lighter – and you can cut as small, or large, a piece as you like! We did wonder about substituting Amaretto for one, or both, of the tablespoons of milk – maybe next time.
We visited the Fess Parker Winery on Sunday – and liked it all! |

Are those pomegranates on top? Either way, it looks sparkling and lovely! 🙂 I used cognac and vanilla in my custard and it was fantastic! Have a great Friday Susan & John!

Woohoo! Love that spot of color in your garnish! Almost used the same but opt for watermelon and apples!

Your tart looks great! I love the caramelly color of the custard. And I think amoretto would be a perfect substitution for some of the milk.
Nice job!

Susan: I’m so glad you stopped by. Yes, the bookstore is a great addition to the “foot of the lake” area. I see you are in Southern California. We lived in La Jolla for several years and our children were born at Scripp’s Hospital. There was a wonderful book store in the village where Dr. Seuss’ wife would pick up his books and have him sign them. I can’t remember the name. I don’t see a way to follow you so I’m having your updates e-mailed to me. Your blog looks, well–amazing!
Best,
Bonnie

I am IN the holiday spirit after looking at your gorgeous opening photograph. What a beautiful and festive looking tart. I definitely am going to go back and try again. I think if I make one large tart instead of six tiny ones, I may have better luck. Such a nice job.

Okay, the tart looks absolutely perfect and French almond tart is probably my favorite. But the thing that made me just laugh with joy is the little coonskin cap you put on your bottle of Fess Parker! Brilliant! Thanks for making my day, Susan!
