This week’s French Fridays with Dorie challenge is for individual Muenster Cheese Soufflés. These light, beautiful souffles come together quickly and easily – just a quick Bechamel Sauce with whipped egg whites and cheese folded in. I love cheese, and Muenster is a particular favorite of mine, so I was really looking forward to these. They’re almost like Macaroni and Cheese without the pasta – if that makes any sense. We served them with Ham Steaks and Collard Greens which will be featured in a separate post. But they are a perfect accompaniment to any fish or meat course.
