Chopped Apples with a little water & Brown Sugar |
This week’s French Fridays with Dorie challenge is for Compote de Pommes. Nothing could be simpler than this super-fresh way to make Compote de Pommes (French Applesauce)! Simply chop up some apples, throw them in a pan with a little water and brown sugar and let them simmer over medium-low heat until they’ve softened, run them through a food mill and stir in some vanilla! Ta-dah! You have a delicious dessert that sounds magnificent.
Okay, in full disclosure, I had to tame my inner Cher! I wanted to grind Nutmeg, sprinkle Cinnamon, shell walnuts, stir in Bourbon, or Calvados! But, one important thing Dorie has taught me is to enjoy foods without overdoing the extra flavors – and this recipe is no exception. Fresh and simple rules.
I have to admit that I don’t make applesauce very often. It’s not that I don’t like it, it’s just that I get spoiled by my mom who brings me some every time she makes it! You see, her neighbor has a lovely apple tree. And, as luck would have it, she gave me a bag of apples this week! There’s nothing to it! In under an hour, you have a lovely, healthy dessert, snack, breakfast, tart filling.

My mother is up to her eyeballs in apples! They have 3 trees that all produced profusely this year…she even mailed me some! Everytime I call her, she’s peeling apples and I hear the dehydrator going! She just can’t stand to see them go to waste, and apparently this is a “good apple year” as everyone has loads! I am sending her your recipe as I don’t think she’s ever tried using brown sugar in her applesauce, but it would be great, I’m sure.

Inner Cher 🙂 Too funny. I rarely go rogue as I am usually coming in under the wire and made this at 6 am one morning before work. Which made me love this recipe all the more. But it was fun to hear of your creative (as usual) ideas for tweaking it. They all sound wonderful.Sweet story about the apples. And nice to see the food mill. That is one item I don’t actually own and I had wondered how it would fare on this one, but peeling and chopping the apples was not bad. Mine turned into sauce in the pan simply by my stirring. An easy and yummy week indeed !

There really is something great about the simplicity of homemade applesauce. (and I too rarely make it, but love it) It would be tempting to fill it with lots of yummy flavours!

Isn’t it nice to have some homemade applesauce? I make this fairly often in the fall/winter to go with my normal yogurt. I sometimes add other flavors, but the basic is nice too. Good for you on the food mill. It turned out beautifully!

My Inner Cher was silent this week – I actually rolled with the recipe almost as written (I used raw sugar instead of brown sugar because somehow – somehow – I had none in the house).
I haven’t learned my lesson yet 🙂

Your “Inner Cher” = LOL! I love your presentation of this compote de pommes in compote dishes. So elegant! I ended up with a touch of spice in mine because I was using the excess apples that didn’t fit in an apple pie. Does that mean I’m channeling my “Accidental Cher”? Have a great week, Susan!

When I ate my applesauce in oatmeal I did add some cinnamon. I wanted to go with the American traditional flavoring too. It was hard to just use the butter and vanilla but I liked it.

I enjoyed everything you wrote this week, Susan. Of course, you would want to make the simple into the elaborate and more flavorful – I am surprised and admire your restraint. Your lovely and delicious looking applesauce is just what Dr. Dorie ordered. Love the depression glass. I haven’t posted but did as Tricia did – I peeled and chopped as I don’t have a food mill now. No problem and I loved the result.

A lot of us had to hold back inner Cher! I might have held her back a little too much, because I skipped the vanilla Maybe I can add a little when I use it for baking later today.
