This week, Fresh Fish Fanatics had Louvar for sale! It’s extremely rare and was so worth getting up early for. My mom & I were lucky enough to get two of the very last pieces. Dania recommended that we just use a little avocado oil, salt & pepper on this fish so as not to smother the delicate flavor of the fish. Our piece of fish was almost 2 pounds so we invited my brother & his wife to share it with us.

Louvar is an elusive fish that is caught only when a swordfish boat trolling the California coastline happens to catch a glimpse of one. It has the odd distinction of dining only on jellyfish. Here is the Fresh Fish Fanatics newsletter that talks about this wonderful fish. They say you may only have this fish once in a lifetime. I highly encourage you to seek it out if you are near the Pacific Ocean at this time of year. Now that I know about it, I will seek out Louvar every chance I get!
It’s flavor is so delicate that it only needs a drizzle of Avocado Oil and a sprinkling of salt & pepper. We prepared it “en Papillote” exactly this way, resting on two slices of fresh lemon, baked in the oven at 450 degrees for 15 minutes.
Over medium heat, toast 1/2 cup Sliced Almonds in 2 Tablespoons Butter until lightly browned.
Add 2 more Tablespoons Butter and saute 6 Mexican (Spring) Onions, finely sliced and quartered, until softened.
We’re heading off on vacation for a couple of weeks, so we’ll see you when we get back!

Those almonds with the green beans sound like a thing I would love Susan! I have a hard time wanting to cook them, but almonds in butter might be the answer! Enjoy your vacations!
