This week’s French Fridays with Dorie challenge is for Dressy Pasta “Risotto” which is really a French version of Macaroni and Cheese. We think of Macaroni and Cheese as being quintessentially American, so what makes it French? Well, of course, the cheese! This stove-top method will have you eating an irresistable version of Macaroni and Cheese in less than half an hour.

One of Dorie’s Bonne Idees is to shave truffles on top – I can only imagine how wonderful that would taste! But, we do have White Truffle Salt so used it to season the sauce. Despite the fact that this version of Macaroni and Cheese is made with cream, it’s lighter than the typical American version. You can find the recipe here and it’s really worth trying. It makes a wonderful side dish and would be fun to experiment with by adding leftover ham, tuna, peas, any number of add-ins for a main dish.
