If you’re not familiar with Indian cuisine, Rinku gives a gracious introduction in the first chapter called “Learning the Essentials: An Approach to Indian Cooking” where she discusses key ingredients and flavors. Her writing style is conversational and her instructions easy to follow. I love that each recipe is accompanied by a full-color photo so you have a good idea of what the finished dish will look like.

Oh, wow – to choose only one Indian dish I would like to make? That is tough, as Indian is one of my most favorite cuisines. I guess one thing I would love to master is a perfect korma – whether chicken or lamb. Other things are being able to serve a full thali, and to make my own paneer. Oh, and malai kofta. See? Looks like a gorgeous cookbook…now if I could just get Bill to eat Indian food :/
