Hello, Everyone!
We’ve missed you. We spent 18 wonderful days on vacation in London, Scotland, and Dublin for our 5th anniversary and my birthday. We saw so many beautiful things and went to so many wonderful places! I’m not quite done editing all of our photos, but will add some of them to the end of our posts over the next few weeks. We started in London, took the train to Edinburgh and spent a few days there before embarking upon the Wind Surf to sail around the north of Scotland and the isles and disembarking in Dublin where I celebrated my birthday! It was lovely – all of it.

This week’s Baked Sunday Mornings challenge is for Chocolate Cheesecake Muffins. I made a double batch to share with my co-workers on my friend Ramon’s last day with us before he starts a new job on Monday. Several people took two! And I packed a separate box for Ramon to take home to share with his family. One thing everyone agreed upon is they’re even “better than brownies!”
Imagine rich, dense chocolate cake studded with chocolate wrapped around a moist cream cheese filling with bits of white chocolate throughout. This is one of my favorite *Baked* recipes of all! They’re not at all difficult to make and the result is just delicious. The recipe says it makes 12 muffins, but I used these cute polka dotted paper cups and a double batch made 40.
