This week’s Baked Sunday Mornings challenge is for Tunnel of Hazelnut Fudge Cake, but I chose to use walnuts instead. It’s not that I don’t like Nutella, or Hazelnuts, it’s just that I like Walnuts better. So, when I read that the original recipe was made with walnuts, I knew it was a good choice.

This cake isn’t complicated to make, but neither is it a typical Bundt cake. It’s meant to be have a tunnel of fudge running through it, but mine was more like a lava cake! I had a little trouble getting it to release from the pan and it cracked, so I left the pan over the cake and let it rest longer. One side of it looked pretty good, so I snapped a couple of photos quickly. However, while I carried it to my brother’s house in the car, it kept sliding. By the time we had dessert, it wasn’t pretty but everyone enjoyed it. To me, it tasted like brownies – good brownies. So, next time, I would probably just make brownies, instead. Not a great success, but not a failure, either.

I felt like there were too many unpredictable factors going on with this cake – especially not being able to use the toothpick test to tell if it’s done!!! Mine stuck in the pan, and I didn’t end up loving the flavour either.

It always make me a bit mad when I waste good ingredients on a cake that doesn’t turn out stellar. But any cake that tastes like a good brownie, can’t be too bad 🙂 Hope you’re doing well Susan!

I think yours looks lovely – but I find it amusing that for those of us who had problems with it sticking to the pan, it sounds like one side plopped out fine, and another was stuck! Seems to be a consistent problem with this cake! Ha! Yours looks beautiful. Kudos to you for attempting this with a more intricate Bundt pan design too. I swapped out almonds for the hazelnuts myself… and it was a tasty switch. I’m not a hazelnut or Nutella fan. Sorry, don’t like walnuts either – but I think this is a good one to use whatever nut you personally prefer! It’s all good! Nice job!

Your cake looks beautiful. I remember long, long ago trying a tunnel bundt cake from a “box mix” (yes, I used to bake from a box). I cannot remember if it worked or not. As long as it was delicious, who cares. I am sure your family loved it, as always.

Yep, a little drama with this cake, but overall I liked it. Sorry to hear that it fell apart– good thing you managed to snap a photo first! Yeah, I would probably make hazelnut brownies before making this again. But it’s a cool idea! Sorry we’ll miss you in NYC next week– I know you’ll be with us in spirit, Susan!
