Baked Sunday Mornings: Hair of the Dog Cake

This week’s Baked Sunday Mornings challenge is for Hair of the Dog Cake!  Just perfect for New Year’s Day, don’t you think?  It’s also know as Rum-Flavored Hot Milk Cake with Broiled Rum Brown Sugar Frosting which sounds delicious but isn’t as humorous.  We served this cake on New Year’s Eve with Champagne Cocktails and the suggested Rum-Flavored Whipped Cream.  Let me just say that 2015 will be a lot happier if more people add golden Rum to their whipped cream!

The cake itself comes together so quickly and is baked in a 9″ x 13″ baking pan.  Although I love the big, fancy Baked cakes, I’m also a fan of what they call “snacking cakes,” and this one is no exception.  If you came home from work craving cake, you could have this on your plate in an hour – all nice and warm and gooey with a slightly crisp top.  We ate this for breakfast on New Year’s Day and I thought it was even better the next day.  The only problem I had was that my cake fell slightly in the middle – so I just poked it with a knife to allow the Broiled Frosting to seep into the cake.

    I am in total agreement– what a lovely way to kick off the New Year! 🙂 I really didn’t know what to expect with this one, and it was such a pleasant surprise. Perfect snacking cake, like you said. Happy 2015! 🙂

    This definitely a great cake for a new year. And it is nice to have an easy cake that is perfect for snacking on days later.
    I too enjoyed it more the next day and the next day. The flavours were more pronounced.
