This week’s Baked Sunday Mornings challenge is for Cherry Almond Crisp. We love crisps of all kinds and make them often. This combination of cherry and almond was amazing! We used frozen cherries because it’s a bit early for fresh ones – the good news is they were perfect so you can enjoy this dessert any time of year. The Gentlemen Bakers encourage using any kind of cereal you like. I used Trader Joe’s Vanilla Almond Granola, not only because I love it, but also because it enhanced the almond flavor.
The only thing that surprised me was that they chose to use almond extract – I thought they would have used Amaretto! Since this was the first time we made this, I followed the recipe, but next time, I’m trying Amaretto with my cherries! The other change I would make is to blend the topping by hand with my pastry blender because I really like chunky topping better than fine – of course, this doesn’t change the flavor at all, it’s just a personal preference.
We served this for dessert at a family dinner and everyone just loved it. Unfortunately, the photos don’t do it justice, but trust me, if you’re looking for a quick, easy, delicious dessert, this is it!

I’m glad you liked this so much! I didn’t love it, but I’m sure it’ll be fantastic in the spring/summer with gorgeous fresh cherries. I’m not big on almond (hate the extract), but I like your idea of using amaretto– I might cook it on the stove first in that case? I subbed vanilla and liked that flavor much better. I also like your idea of hand-cutting the topping, as I like it very chunky too. I’m making this for 4th of July! 🙂

My Mother made the best crisps when the fresh fruits were in season in Iowa. You could not beat her apple and peach crisps. I try and cannot replicate. Close but no cigar. This type of crisp might be a whole different story and something to try because it’s quick and, you say, very tasty. When I am at Trader Joe’s this week I am going to buy TJ’s Vanilla Almond Granola and make your crisp. Will go with the liquor instead of extract. This looks like a winner, Susan.
