
We visit Paso Robles, California, several times a year.  Just three hours north of us, this gorgeous, rugged, hilly heart of the Central California Coast provides the perfect climate and terrain for world-renowned wines.  As evidenced all across Europe, olives thrive in the same terroir as grapes, so it was only natural that over a decade ago, olives were planted and olive oil was made at the Pasolivo Ranch in Paso Robles.  We’ve visited the Pasolivo ranch many times over the years.  The beautiful, treed property is lovely to explore and embodies the beauty of old world California.  From this beautiful terrain comes delicious olives that are pressed into a wonderful line of olive oils, olives, vinegars, artisan foods, and bath and body products.  So, of course, knowing the quality of Pasolivo Olive Oils, I didn’t hesitate to accept a sample to review on my blog.  Click here to see a number of recipes we’ve created over the years with products from Pasolivo.

We wanted to create something unexpected to showcase Pasolivo’s Extra Virgin Olive Oil.  When John decided to roast a pork tenderloin roast in a curry spice rub, I decided to roast carrots with Indian spices as well.  We served this meal with fluffy white rice.  The carrots and yogurt sauce make a great pairing with the spiciness of the roasted pork.  Once you try these carrots, you’ll enjoy them with all kinds of dishes.  They can be eaten hot, or at room temperature.

- Roasted Carrots
- 6 carrots
- 4 Tablespoons Pasolivo Extra Virgin Olive Oil
- 2 teaspoons Garam Masala Seasoning
- Salt, to taste
- Toasted Almonds
- ½ cup Almonds, chopped
- Yogurt Herb Sauce
- 7 ounces Greek Yogurt
- 1 Tablespoon Pasolivo Extra Virgin Olive Oil
- 1 Tablespoon Lemon Juice
- 1 Tablespoon each fresh Chives, Dill,Mint, and Parsley minced
- ¼ teaspoon Garlic Powder
- Salt and Pepper, to taste
- Roasted Carrots
- Preheat Oven to 400 degrees.
- Clean carrots, but don't peel them.
- Make a sauce by stirring Olive Oil and spices together.
- Place carrots in a square baking pan and drizzle with sauce, turning to coat.
- Sprinkle with freshly ground sea salt.
- Bake for 20 minutes, remove from oven, and turn carrots over to coat.
- Return to the oven for 35 minutes, or until easily pierced with a knife.
- Toasted Almonds
- While carrots are roasting, coarsely chop almonds.
- Line a baking sheet with foil and scatter almonds evenly over it.
- Bake for 10 minutes until lightly browned.
- Set aside.
- Yogurt Herb Sauce
- Whisk yogurt, herbs, olive oil, and lemon juice together until fully blended.
- Assemble
- Place carrots on plate, drizzle with Yogurt Sauce, then sprinkle with Toasted Almonds.
This method of roasting pork tenderloin would work well with a number of spices, but this seasoning combination is wonderful – spicy, and flavorful. Â Despite its elegant appearance and delicious flavor, Pork Tenderloin Roast is easy to make on a worknight.


- 2½ - 3 pound Pork Tenderloin
- 3 Tablespoons Pasolivo Extra Virgin Olive Oil
- 2 Tablespoons Rogan Josh Seasoning
- 2 teaspoons Salt
- 2 teaspoons Onion Powder
- Preheat oven to 425 degrees.
- Line a roasting pan with foil and a roasting rack.
- Whisk together olive oil and spices.
- Brush evenly over pork.
- Roast for 30 - 40 minutes until pork reaches 160 degrees when a meat thermometer is inserted into the center.
- Allow to rest for five minutes before slicing.
